Here is a grafted bud, the reason this is done is so that a delicate flowering branch will grow out of a root stock that is more resistant to frost, and therefore will be able to survive in colder climates.
Super cool that you're learning how to graft! I remember it was a hard skill to master (one I've never done) on our orchard. Did you know that all apple trees are grafted? It's because the seeds from one apple will all make different types of apple trees, so in order to get a specific variety, a branch from a known tree has to be grafted onto rootstock.
